BAKED SWAI

(This is our favorite fish, very mild flavor.  It's real name is an Iridescent Shark, but it is really a type of catfish from southeast Asia, and it glows in the dark - how cool is that??)

Frozen Swai Fillets
Butter-Flavored non-stick cooking spray
Your Favorite Seasoning (Lemon Pepper, Mrs. Dash, etc.)
Large Glass Baking Dish

Coat the bottom of a large baking dish with butter-flavored non-stick cooking spray.  Lay the fillets flat in dish, spray top with more spray and sprinkle with seasoning of your choice.  Bake in 350° oven for 30 to 40 minutes (if starting with thawed fillets, reduce time.)
