MINT CHOCOLATE CHIP MUFFINS (aka Leprechaun Lumps)

1 package Chocolate Chip Pancake mix
1 package Vanilla Shake mix
1/4 tsp baking powder
4 packages Truvia, Splenda, or other artificial sweetner
1/2 tsp vanilla extract
1/2 tsp mint extract
1/3 cup water
Green food coloring

Preheat oven to 350°.  Spray muffin pan with butter-flavored non-stick cooking spray.  Mix dry ingredients in small mixing bowl.  Stir in vanilla and water.  Add Green food color to desired shamrocky tint.  Divide equally into 4 muffin cups (should be about 1/2 full)*.  Bake 15 minutes. (2 muffins = 1 meal)

* you can also use a mini-muffin pan, should make 6 filled to top (3 mini muffins = 1 meal)
