2 packages MF Original Pancake mix
2 packages Vanilla Shake mix
1 package Sugar Free Lemonade mix (Crystal Light or generic)
1/2 tsp baking powder
6 packages Truvia, Splenda, or other artificial sweetner
2 tsp vanilla extract
2/3 cup water
1 Tbsp poppy seeds

Preheat oven to 350°.  Spray mini muffin pan with butter-flavored non-stick cooking spray.  Mix dry ingredients (except poppy seeds) in bowl.  Stir in vanilla and water. Blend in poppy seeds.  Pour in mini muffin pan and bake for 15 minutes.

Makes 12 mini-muffins (Three makes one meal!)  Once cool store in zip lock bags to keep fresh and moist.

(If you'd rather have full-size muffins, split batter into 4 spaces of a coated muffin pan and cook for 20 minutes)
