SCALLOPED EGGPLANT

1 medium size eggplant
2 Tbsp chopped green pepper
2 Tbsp chopped onion
1 can diced tomatoes
1/3 cup salsa
1 tsp salt
dash pepper
Butter-Flavored non-stick cooking spray

grated cheese

Preheat oven to 350°.  Peel eggplant and cut into small even pieces.  In skillet, saute green pepper and onion in butter flavored non-stick cooking spray.  Add tomatoes, salsa, salt, pepper and eggplant.  (You can use a bit more butter spray at this stage for flavor if you like)  Simmer 10 min.  Pour into casserole dish, lightly cover with grated cheese and bake 20 min at 350°.
